THE STAR OF ANY TUSCAN FEAST IS THE BISTECCA

Prime cuts have been sourced by our butcher from Black Angus cattle raised on lush pastures in Idaho ranches. After in-house dry-aging, the steaks are seasoned with a dry rub of Chianti aromatics before being cooked on a custom-made Tuscan broiler.

USDA Super Prime cuts have been carefully selected by our butcher from grass-fed, grain-finished young Black Angus cattle raised in the midwest United States. After our in-house 12-14 day dry-aging process, the steaks are seasoned with a dry rub of Chianti aromatics before being cooked on a custom-made Tuscan broiler.

Having traversed a long road from Philadelphia to New York, from farm-to-table pioneer Talula’s Garden to New York's famed kitchen at Barbuto, good timing and a knack for chasing life steered him towards his next adventure: Hong Kong.
